ABOUT CHEF

Nick Elmi is a James Beard Award-nominated chef, Bravo's Top Chef Season 11 winner, and a leading force in Philadelphia's dining scene. After graduating from the Culinary Institute of America, Elmi honed his craft in the country's top kitchens – including under legendary chef Georges Perrier of Le Bec-Fin – before opening his own celebrated restaurants. His first solo venture as chef and owner, Laurel, quickly earned national acclaim, being named one of GQ's "Ten Best Restaurants in America," garnering a James Beard Nomination for "Best New Restaurant," and was also Michelin recommended in 2025.

Elmi has since expanded with a series of projects as a partner of BE Hospitality along with Fia Berish and Donna Galvin at The Ironworks at Pencoyd Landing in Bala Cynwyd, inculding: Lark, a sustainable and locally-driven restaurant; The Landing Kitchen, a casual all-day cafe, and The Pump House, a versatile riverside event venue. His debut cookbook, Laurel: Modern American Flavors in Philadelphia, was published in 2019.

A longtime supporter of No Kid Hungry, Elmi currently serves as Chef Chair for Philadelphia's Taste of the Nation. He lives in Collingswood, New Jersey, with his wife and two children, continuing to balance his passion for innovative cuisine with a strong commitment to family and community.

ABOUT CHEF 

Chef Jack Yoss is the VP of Culinary at Hai Hospitality, the award-winning group behind renowned concepts like Uchi, Uchiko, Uchiba, and Loro. With a culinary career spanning continents - from Las Vegas and Los Angeles to Barcelona, Bali, and Phuket - Yoss brings global expertise and visionary leadership to every table.

He began cooking at just 10 years old, quickly rising through the ranks to become one of Wolfgang Puck's youngest chefs de cuisine at 27. His early work at acclaimed restaurants like Chinois and Postrio helped shape his deep knowledge of Asian and fine dining cuisine, setting the stage for a dynamic, internationally recognised career.

Yoss first joined Hai Hospitality in 2010 to open Uchiko Austin before departing to work extensively throughout Southeast Asia and Europe over a six-year span, during which he oversaw various high-profile grand openings with W Hotels & Resorts, and served for two years on the Food & Beverage Council for Asia-Pacific with Starwood Hotels & Resorts. He also did turns at Wave restaurant, Chateau Montautre, La Fontenille-France, and staged at former Michelin-starred Nahm in London.

Yoss returned to Hai Hospitality in 2017, this time as Corporate Chef and is now Vice President of Culinary, and has spent the past seven years working to drive innovation and efficiency in a variety of capacities, from design-build; to culinary direction; to helping to ensure the long-term operational financial health of Hai Hospitality concepts. ABOUT CHEF 

Chef Tristen Epps-Long, winner of Top Chef Season 22 in 2025, is redefining modern Afro-Caribbean cuisine through bold flavours, cultural storytelling, and global influence.

Born of Trinidadian roots, Tristen traces his passion for cooking back to childhood, when he travelled the world with his active military mother. Living in Guam, Japan, and the Philippines shaped his eclectic palate and sparked a lifelong curiosity for flavoru and technique.

He earned his bachelor's degree in Culinary Arts and Food & Beverage Industry Management from Johnson & Wales University in Charlotte, NC, followed by a rigorous three-year apprenticeship at The Greenbrier under Certified Master Chef Richard Rosendale. After appearing on ABC's The Taste in 2014, Tristen joined Marcus Samuelsson's Red Rooster Harlem, beginning a creative partnership that would span multiple cities and countries.

Tristen later served as Executive Chef at Red Rooster Overtown in Miami, where he led the restaurant to a Michelin Guide Bib Gourmand award and international acclaim, including a spot on Condé Nast Traveler's "12 Best New Restaurants in the World" list. Personal accolades followed, including the StarChefs Rising Star Award and a James Beard Award semifinalist nod for Best Chef: South for his work at Eden Roc's Ocean Social by Tristen Epps.

Dedicated to bringing recognition to Black foodways and elevating it within fine-dining culture, Tristen aspires to be a trailblazer and role model for the next generation of chefs.

Now based in Houston, Tristen is building Epps & Flows Culinary, his hospitality group focused on concept development, cultural storytelling, and culinary collaboration. His next concept is Buboy, a contemporary Afro-Caribbean tasting menu restaurant rooted in heritage, memory, and expressive technique. Through Buboy, Tristen aims to honour the depth and diversity of the African diaspora while pushing the boundaries of modern fine dining

ABOUT CHEF 

Chef Dale Talde is the host and producer of Tastemade's All Up In My Grill, the Executive Chef/Owner of Goosefeather at the Tarrytown House Estate in New York (which was named one of Esquire's Best New Restaurants in America in 2020), and the co-founder of Food Crush Hospitality, a full-service hospitality consulting firm. His latest project is the opening of Talde Noodle and Dumpling in LaGuardia Airport's newly renovated Terminal B Headhouse. Dale was named a semifinalist for the 2022 James Beard Awards in the "Best Chef: New York State" category, and the author of the Asian-American cookbook, which was released in 2015.

His passion for cooking began at a young age in his native Chicago where he learned to prepare meals alongside his mother in the kitchen. The proud son of Filipino immigrants, he grew up immersed in his family's cultural heritage, while also enjoying the life of a typical American kid. Dale applies this distinct Asian American experience to his menus and hospitality concepts. Beyond Asian American food, Dale has opened and consulted on projects focused on Cantonese cuisine, Japanese cuisine, Italian cuisine, traditional bar and grills, rooftops, and nightclubs. He is a builder and inventor at heart.

Aside from his work in the kitchen, Dale is a three-time cheftestant on Bravo's Emmy Award-winning culinary series, "Top Chef," and is remembered as one of the show's most popular cast members. He competed in Season 4: Chicago, Season 8: All-Stars, as well as "Top Chef Duels," later returning as a guest judge on Season 18: Portland and "Top Chef Amateurs". Dale has also competed and judged on Food Network's "Tournament of Champions," "Chopped," "Iron Chef America," and "Beat Bobby Flay," as well as Esquire's "Knife Fight"

Paul Carmichael is the visionary and chef behind acclaimed Kabawa and Bar Kabawa in the East Village. The restaurant and bar are deeply personal and celebrated projects that offer a nuanced and distinct perspective on Caribbean cuisine. Every touch point — from the custom mosaics to the ingredient sourcing to the instrumental music — is intentional and thoughtful, tapping into chef Paul's upbringing in Barbados to reflect the vibrant, welcoming spirit of a Caribbean home.

Both Kabawa and Bar Kabawa have received numerous accolades. Set sail aboard Zara, Bermuda's largest and most luxurious sailing catamaran, and cruise into the sunset with a glass in hand and exceptional company all around.

The evening will feature curated bites and canapés by The Loren's guest chef Ann Ahmed, music by DJ Korie Minors, and a silent auction showcasing an inspiring collection of items generously donated by local partners.

All proceeds from the evening will support Roots, the climate initiative founded by The Loren, with funds directed toward the Bermuda Community Climate Program (BCCP). This work includes impactful local efforts led by organisations such as BUEI and WindReach—helping to protect and strengthen Bermuda's natural environment and community for generations to come.

Throughout the evening, guests will enjoy the rare opportunity to meet Clément Wiart of Taittinger Champagne, who will guide the experience with insights into the history, craftsmanship, terroir, and traditions behind one of Champagne's most prestigious houses. From vineyard to bottle, guests are invited to discover the nuances that make each cuvée unique while engaging in conversation and tasting with one of the region's passionate ambassadors.

Clement Wiart was born in Châlons-en-Champagne, in the heart of France's renowned Champagne region. Coming from a family of farmers and winegrowers, a career in the wine industry felt like a natural path. He studied business in Troyes, near the famous Côte des Bar vineyards, before beginning his career in Champagne. For the past 10 years, he has worked with Taittinger and today serves as Director for Latin America and the Caribbean.

Each Champagne selection will be thoughtfully paired with a specially curated four-course tasting menu created by Chef Jeremy Metz of The Loren. Designed to complement and elevate the character of every pour, the menu will showcase refined seasonal ingredients, elegant presentation, and exceptional flavor combinations inspired by both French technique and coastal sophistication.

The Sturgeon Moon Experience

The Sturgeon Moon is the traditional name given to the full moon that occurs in August. The name originates from Native American tribes and early fishing communities around the Great Lakes, where sturgeon fish were most plentiful and easiest to catch during this time of year. Revered for their strength and longevity, sturgeon became a symbol of resilience, abundance, and connection to nature's rhythms.

Though the moon itself does not appear like a sturgeon, it often glows with a rich golden hue when rising in the warm summer sky.
