ABOUT CHEF 

Chef Dale Talde is the host and producer of Tastemade's All Up In My Grill, the Executive Chef/Owner of Goosefeather at the Tarrytown House Estate in New York (which was named one of Esquire's Best New Restaurants in America in 2020), and the co-founder of Food Crush Hospitality, a full-service hospitality consulting firm. His latest project is the opening of Talde Noodle and Dumpling in LaGuardia Airport's newly renovated Terminal B Headhouse. Dale was named a semifinalist for the 2022 James Beard Awards in the "Best Chef: New York State" category, and the author of the Asian-American cookbook, which was released in 2015.

His passion for cooking began at a young age in his native Chicago where he learned to prepare meals alongside his mother in the kitchen. The proud son of Filipino immigrants, he grew up immersed in his family's cultural heritage, while also enjoying the life of a typical American kid. Dale applies this distinct Asian American experience to his menus and hospitality concepts. Beyond Asian American food, Dale has opened and consulted on projects focused on Cantonese cuisine, Japanese cuisine, Italian cuisine, traditional bar and grills, rooftops, and nightclubs. He is a builder and inventor at heart.

Aside from his work in the kitchen, Dale is a three-time cheftestant on Bravo's Emmy Award-winning culinary series, "Top Chef," and is remembered as one of the show's most popular cast members. He competed in Season 4: Chicago, Season 8: All-Stars, as well as "Top Chef Duels," later returning as a guest judge on Season 18: Portland and "Top Chef Amateurs". Dale has also competed and judged on Food Network's "Tournament of Champions," "Chopped," "Iron Chef America," and "Beat Bobby Flay," as well as Esquire's "Knife Fight"

This six-week course offers an in-depth exploration of ceramic hand-building techniques, from pinching and coiling to slab construction and surface design. Open to all levels, the course is especially well suited for students looking to develop or deepen their ceramic practice through a structured, hands-on studio experience.

Led by Blair Masters, students will learn to create both functional and sculptural forms while developing confidence in a variety of traditional and contemporary hand-building methods.

  • Weeks 1-3: Participants will explore foundational techniques including slab building, coiling, and surface decoration, while being encouraged to experiment with their own ideas and creative direction. Demonstrations will include approaches to texture, form, and composition, as well as decorative processes using slips, stains, underglazes, and carving techniques.
  • Week 4: Reserved to fire the student works to bisqueware. The class will not meet this week.
  • Week 5: Students return to glaze their work, exploring glazing techniques and colour application to complete their finished surfaces.
  • Week 6: Concludes with the glaze firing. The class will not meet this week.

By the end of the course, each participant will have completed at least one ceramic piece from concept to finished form, while gaining practical experience across the full ceramic process. More than a technical course, the workshop offers space for experimentation, creative growth, and the confidence to continue working with clay beyond the studio.

Dates: Saturdays, Aug 8 - Sep 12 (no class on Aug 29 or Sep 12, firings are scheduled for these dates)

Class Size: Maximum of 10 participants to ensure individualised attention and a supportive environment.

Ceramics Studio is an open studio space for ceramicists to meet up and access equipment to throw, sculpt and create at their own pace. This space is open to people who have taken Shaping the Basics with Blair Masters or can prove similar experience. While studio members are encouraged to guide and support each other, creative independence is required.

Run by a community of ceramicists, the Ceramics Studio is open from 5-8pm each Thursday.

Duration: Ongoing, meeting each Thursday

Age group: Adults and teens 16+

Skill level: Must have completed a foundational ceramics courses with Blair Masters or provide proof of similar experience.
